*SERVES 2

Ingredients

1 ripe avocado

¼ cup cocoa powder or raw cacao powder

¼ cup coconut or almond milk (start with less and adjust to desired consistency)

3 tablespoons maple syrup

1 teaspoon pure vanilla extract

Pinch of sea salt

Optional toppings: shredded coconut, fresh berries, banana slices, cacao nibs, sprinkle of cinnamon

Method

PLACE THE AVOCADO, COCOA powder, coconut milk, maple syrup, vanilla, and salt in the bowl of a food processor or high-speed blender. Slowly add in a splash or two of coconut milk, until the mixture reaches the desired consistency. (This is a thick dessert.) Place the mousse in the refrigerator for at least an hour to let the flavors set before serving. Store in the refrigerator for up to 2 days. Serve in individual small bowls and top with shredded coconut and fresh berries or other optional toppings.
